Sun-dried Tomato & Chickpea Burger Salad | EAT OF THE WEEK


Happy National Burger Day, You don’t need to hurt any animals today!

100% favourite eat of this week! These burgers are from The Minimalist Baker they are good for you, cheap and easy to make. What more could a girl ask for 🌱❤️

First of all, I want to start off by saying that I apologise for the lack of images of what I am doing in these food posts. I get too excited for the food and forget to take pictures of everything. #hungrygirlproblems

I also want to thank Dana of The Minimalist Baker for this burger recipe, these burgers have made it into my top 5 meals to make/eat, mostly because the ingredients are cheap, accessible and they taste SO DAMN GOOD! (my meat eater boyfriend approves!)

I altered the recipe a little I used red onion instead of yellow or white and used tinned chickpeas and just drained them and put them straight in the processor, this is because I didn’t have dried chickpeas and couldn’t be bothered to wait for the cooking process… again, #hungrygirlproblems

What you need 

For the burgers 

A food processor

1 tin of chick peas  (drained and rinsed)

2tbsp tahini (sesame seed paste)

1 1/2 tsp ground cumin

I used 3 cloves of smoked garlic instead of 6

1/2 cup (about 10) sun-dried tomatoes (patted dry if coming from jar)

1/4 tsp salt, 1/2 tsp black pepper

1/2 tsp tumeric

olive oil for cooking

For the Salad 



Gherkins (about 2 chopped)


Red onion


Vegan salad cream (Tesco Free From Section)

How to make it 

I followed all the steps on Dana’s post which you can find here 

I just skipped the part where she cooks the chickpeas as I was using tinned ones, and swapped out the white onion for red. You need to make sure you blend this well in the processor and don’t skip the part where you let it rest in the fridge!

It will take a lot of will power to stop me making these constantly, these burgers are a fantastic substitute for meat or even the frozen vegan burgers you find in supermarkets, they are much cheaper too!!
