DietMondays here again, I’ve had a busy few weeks and keeping up with the plant based diet has been challenge while moving back to my Dad’s (not an avo in sight,shock horror!) but I’ve got through it and it’ll all be worth it. I’ve decided to take myself off for a little trip to Australia for a whole month so, unfortunatly, this will be my last DietMondaysXRaelikesfroot post for a few weeks, but I promise to get some great inspo down under and come back with a baking vengence.
I decided to end on a classic recipie, its my old housemates and gal pals fave baking challenge. Vegan Banana Loaf Cake is super easy and even more delish as vegan recipie. No eggs, no cow juice, still awesome!
4 bananas prefreably over-ripe
120ml of your fave plant milk (I prefer almond or coconut for this recipe)
125g wholewheat flour
125g porrige oats or oat flour
1.5tsp baking powder
1.5tsp baking soda
3tbsp melted coconut oil
1tsp vanilla extract
pinch of salt
1tbsp mayple syrup
How to make it
Preheat the oven to 190°C and grease and line a lof tin with baking paper
Blend the oats in a food processor to make oat flour, or use shop bought oat flour if you don’t have a blender
Mash or blend 3 of the bananas into a mixing bowl with the plant milk, coconut oil, maple syrup and vanilla extract and whisk together until combined
In another large mixing bowl mix the two flours, salt, baking powder and soda and cinnamon together
Mix the wet and dry ingredients togther until you have a smooth cake mixture consistancy
Pour the mixture into a loaf tin and tap on the counter to remove any air bubbles
Slice the fourth banana lengthways and arrange on the top of the cake and sprinkle with a little brown sugar. Bake the loaf for 40-50 minutes the top should be brown and when you put a knife or toothpick into the cake it should come out clean. Allow to cool
I like to whisk 2tbsp of brown sugar with 2tbsp Vegan Butter until smooth to make a brown sugar butter to spread all over your warm banana bread.
If you want to add Nuts, Fruit, Dessicated coconut or any other ingredients add to the cake mixture before pouring in the tin
